Armin Alcantara

Administrator

Armin is originally from Columbus, Ohio where he started his career in long term care in 2006, bringing his background in hospitality and culinary to the field through dining services after finishing school. Over the years, he supported both home office teams and communities across the company, traveling as a Culinary Specialist and Regional Director of Dining, where he collaborated closely with OPS and Sales. After more than a decade in dining leadership, Armin transitioned into operations where he has spent 4 ½ years driven by his desire to make more of an impact in the community. He finds fulfillment in building relationships with residents and their families, guiding them through the journey of finding a home where their loved ones can thrive.

 During his free time, Armin enjoys adventures with his German Shepherd, Kona—hiking, discovering new camp spots around the Pacific Northwest, fishing, and embracing the outdoors. In the winter months, you’ll find him snowboarding on the slopes of Mount Hood or Bachelor.

Serafina Counts

Memory Care Administrator

Serafina has been dedicated to the caregiving field for over 20 years—spending her first decade as a caregiver and the next as a Med Tech—and her journey continues. At just 17 years old, she began her first job in a memory care unit, where she discovered her lifelong passion for caring for others. With a kind spirit and a natural ability to bring comfort, Serafina finds joy in being a source of support and relief for those around her, especially now that she’s planted her roots with The Canopy.

She loves connecting with people and creating a positive, welcoming environment wherever she goes. Outside of work, Serafina enjoys spending time with her family—including her five sisters and fraternal twin—alongside her husband and their two dogs. She also loves reading, spending time outdoors, and finding peace in nature.

Amy Sandoval

Wellness Director

Amy is a registered nurse and has been in community-based care for over 15 years. By chance she began her nursing career by landing her first job in a memory care community and knew within days that this was her calling. Amy has a passion for caring for seniors, mentoring staff and enjoys being part of a community. 

When she is not working, Amy is spending time with her family. Her and her husband have three children, two girls and one boy. They live on a few acres where they care for goats and chickens. Amy loves spending time outdoors including camping, boating and going to the beach.

Larissa Moore

Office Business Director

Larissa has had the privilege of working in the Assisted Living field for almost 30 years. Her experience spans many areas of Assisted Living and Memory Care. She began her career as a Dietary Server and advanced through roles including Caregiver/Med Tech, Receptionist, Administrative Assistant, Resident Care Coordinator, and Staffing Coordinator—ultimately finding her passion as a Business Office Director.

Larissa often says, “I have a passion for people and paperwork.” What she loves most about her work is that each day allows her to do what she’s most passionate about—caring for people. She truly loves what she does.

Outside of work, Larissa enjoys camping, hiking, traveling, and spending time with her family. She has five siblings and fifteen nieces and nephews, and cherishes every opportunity to visit her parents or host her nieces and nephews for fun-filled weekend shenanigans.

Larissa is excited to be part of The Canopy Senior Living team and looks forward to helping it grow and thrive!

Dianna Novak

Registered Nurse

Dianna has been a nurse since 2007 and began her career as a travel nurse, successfully working in 48 different states and gaining experience in a wide variety of nursing roles. In 2016, she transitioned into senior living, where she discovered her true passion for working with older adults. After falling in love with Oregon during her travels, she decided to make it her permanent home in 2022.

In June of 2025, Dianna proudly earned her RN, BSN degree — a milestone that reflects her dedication to lifelong learning and her commitment to providing exceptional care. She finds great joy in building meaningful relationships with residents and making a positive impact on their daily lives.

Originally from Connecticut, Dianna still finds time to visit her family on the East Coast, but everyone who knows her knows her heart belongs here in Oregon. She loves embracing the camping life and all the natural beauty Oregon has to offer.

Outside of work, Dianna enjoys reading, gaming, watching anime, and crocheting. She has two wonderful stepchildren and a supportive husband who are her biggest fans. She also has two dogs, an Australian Sheep dog and a Husky. 

Zeke Barrera

Maintenance Director

Zeke Barrera was born and raised in Texas, where he attended the University of Texas Pan American to study Sociology and Psychology. Prior to working in senior living, he worked with a grant writing firm with a focus on educational grants which served low-SES populations where a passion for assisting economically disadvantaged populations grew. 

In 2013, he moved to Oregon to explore the great PNW and shortly thereafter started a family. He has worked as a Maintenance Director in senior living since 2020. When not working, he enjoys exploring old growth forests, mushie hunting, making beer and making music.
